Founder of MIMO and food enthusiast, Lara blends her Korean, Italian, and Brazilian roots into everything she creates — and yes, it’s as tasty as it sounds.

Inspired by a conversation with her daughter, Lara created MIMO, which is starting off with pão de queijo — a beloved Brazilian cheese bread made with tapioca flour (naturally gluten-free) and Swiss cheese.

Mimo means a small gesture of affection — and that’s exactly what her food is meant to be: a token of togetherness, comfort, and joy, lovingly handmade one by one, just like her family would make for her — and just like she makes for her own daughter.

Crisp on the outside, soft and chewy inside, pão de queijo is traditionally eaten for breakfast or as an afternoon snack, often shared with family and friends. In Brazil, it’s a symbol of home, hospitality, and those little moments that bring people together — the very heart of what MIMO stands for.

MIMO is beginning by sharing our pão de queijo with restaurants and cafés — frozen and ready to bake in just 15 minutes — as well as with home cooks who want to bring a warm, handmade touch to their table. However you enjoy them, we hope they carry a little mimo into your day.
